Anush's Beet and Black Bean Salad

Nice main course served with rice or quinoa, or as a side dish service with green salad.

4 cups beets (1 used 3 large beets which yeilded about 4 cups diced
3 cups black beans, (canned), rinsed and drained
1 can Hearts of Palm (4 stalks - about 1 to 1 1/2 cups), sliced
1 cup shredded carrots
1 1/2 cups hearts of palm, sliced
1 cup diced celery
6 scallions, diced
fresh lemon juice
fresh parsley or mint leaves (optional, chopped)
salt and pepper
balsamic vinegar
1/2 tsp cumin
Boil beets about 40 minutes until tender, put in cold water to cool. When cool, peel and dice into 1/2" cubes. Add, shredded carrots, rinsed black beans, chopped celery, sliced hearts of palm, celery. ...
