Whole grain salad with tomato and persian cucumber. Packs well for lunches or great served on a bed of greens. Delicious spin on a traditional Armenian favorite - Eech.

2 cups fine Bulghur
1 large onion, finely chopped
1 8 oz can tomato sauce
1 bunch green onions, cleaned and finely sliced
1 Tbsp. Aleppo pepper
1 Tbsp. Sumac
5 Persian cucumbers
2 large tomatoes, chopped
1 1/2 c. boiling water
1 Tbsp. sugar
2 Tbsp Olive oil
