Anush's Indian Spice Carrot Salad

A flavorful carrot salad with apple, almond, cranberry and sprouts. This recipe makes 12 cups - great for potlucks

1 and 3/4 pounds carrots, grated (use food processor to make it fast)
1/ cup celery, chopped - use the inner stalks with the leaves as well
2/3 cup Craisins
2 1/2 Tbsp Cholula Hot Suce, Chili Garlic
1/3 cup slivered almonds
1 large fresh apple, cut in thin slices and then into 1/2" pieces
2/3 cup apple juice, unsweetened
1 cup fenugreek sprouts - it's okay to substitute alfalfa sprouts
1/2 large brown onion, finely chopped
1 Tbsp cumin seeds
1 Tbsp brow mustard seeds
1 1/2 Tbsp coriander seeds
1 tsp cinnmon
1 tsp salt, to taste
