Anush's Lentil & Butter Bean Salad

A light and lemony vegan salad that's good as a main course or side dish. Also great for potlucks.

2 1/2 cups cooked lentils (I like to use the steamed ready-to-eat lentils, packaged)
1 - 15 oz can butter beans, drained
6 green onions, sliced
2 medium roma tomatoes, chopped
1 - 8 oz can sliced mushrooms, drain
6 - stalks celery, chopped
Juice from 2 lemons
1 tsp. cumin
salt & pepper
1/2 tsp. cayenne pepper
2 Tbsp. olive oil
In a large bowl, combine beans, chopped tomatoes, mushrooms, celery and stir. Add lemon juice, olive oil and seasonings, and stir adjusting seasonings to taste. Serve chilled. If you're following Weight...
