Apple and Chocolate Chip Baked Oatmeal

1 1/4 cups old fashioned rolled oats, 1/4 cup light brown sugar, 1/2 tsp baking powder, 1 tsp cinnamon, 1/4 tsp salt, 1/2 cup peeled diced apple (I used royal gala) , 1/3 cup semi-sweet chocolate chips, 1 small banana sliced, 2 cups of water, 1 egg white, 2 tbsp melted margarine, 1 tsp vanilla extract, 2 tbsp chopped almonds.
Preheat oven to 375 and spray 8X8 glass baking dish with oil. In large bowl combine oats, sugar, baking powder, cinnamon, salt, diced apples and chocolate chips. In a separate bowl whisk together melted margarine, water, egg white and vanilla extract. Transfer oat mixture to glass baking dish and spread out evenly, pour wet ingredients over oats, top with sliced banana and chopped almonds. Bake 20-25 minutes or until the oats and banana look golden.
