For the Brine:
4 c apple cider
1.75 gallons water
2 cups coarse kosher salt
Juice from 1 orange
1 T pepper
3 dried bay leaves
6 sprigs fresh rosemary
8 sprigs fresh thyme
8 cloves garlic
1 small onion
