One time I was watching The Pioneer Woman on Food Network, and she shared that whenever she’s making a recipe that tastes delicious but maybe doesn’t always look perfectly formed/shaped, she likes to call it “rustic.” Genius. With that in mind, I’d like to introduce my rustic apple cinnamon chip muffins. Disclaimer: these are delicious and really simple. Proceed at your own risk.

1 granny smith apple
2 cups Jiffy baking mix (or some other baking mix)
5 tbsp butter
1/2 cup sugar
2 eggs
1 tbsp vanilla
1/3 cup chopped walnuts
1/3 cup cinnamon chips

Preheat the oven to 300°. Core your apple and cut it in half, sprinkling cinnamon on each half. Bake for approximately 30 minutes, or until it begins to break apart.
