Apple Cinnamon Oatmeal Cream Pies

A soft, caky cookie with a caramel marshmallow cream filling

For the cookies:
1.5 packages cinnamon apple muffin mix (or your favorite flavor)
1/4 cup oil
1 egg
2/3 cup old fashioned oats
1/2 tsp vanilla extract
1/2 tsp molasses
1/8 cup brown sugar (optional)
For the filling:
10 large marshmallows
1/3 cup caramel bits
1 tsp butter
1.5 packages cinnamon apple muffin mix (or your favorite flavor)
1/4 cup oil
1 egg
2/3 cup old fashioned oats
1/2 tsp vanilla extract
1/2 tsp molasses
1/8 cup brown sugar (optional)
For the filling:
10 large marshmallows
1/3 cup caramel bits
1 tsp butter
Preheat the oven to 350
Line a cookie sheet with parchment paper
In a large bowl, combine the egg, oil, vanilla and molasses, followed by the oats, muffin mix and brown sugar
Mix until thoroughly combined
Using a cookie scoop, drop dough onto cookie sheet (you can flatten the dough slightly if you want larger cookies - the muffin mix ensures they will still rise)
You should get 18-20 cookies
Bake 10-11 minutes or until golden brown
Let cool at least 30 minutes before frosting
While the cookies are cooling, melt the butter, marshmallows and caramel bits in a saucepan over medium heat
Stir frequently so the mixture doesn't burn, fully incorporating the marshmallows with the caramel bits
Working quickly, place (roughly) 1.5 TBS filling between two cookies and press together gently
Do this for each set of cookies so you end up with 8-10 cream pies
Enjoy with a large glass of milk :)
