Apple Cranberry Quinoa

Apple Cranberry Quinoa has all the wonderful flavors of fall. The Nutty Quinoa is tossed with apples, almonds, dried cranberries and baby kale. It's a super meal filled with SUPER foods.

1 c quinoa, cooked according to directions (I add a smashed clove of garlic in water while cooking to add flavor)
1 apple, diced
1/2 c dried cranberries
2.5 oz of sliced almonds
1 – 2 cups of baby kale ( or substitute baby spinach)
Garnish with crumbled feta on top
Dressing Ingrediients:
½ tsp orange zest
2 T freshly squeezed orange juice
1 T honey mustard
1 T maple syrup
salt/pepper to taste
2 T cup extra virgin olive oil
