Super moist; perfect blend of tangy and sweet. Great for breakfast, brunch or even dessert!

1/2 cup unsalted butter, room temperature
1 cup sugar
2 eggs
1 tsp vanilla
2 cups all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
1 cup plain yogurt (I’ve also used plain Greek Yogurt)
2 large baking apples, cored and diced into small bites (2 cups)
Topping
1 cup brown sugar
1 1/2 tsp cinnamon
1 Tblsp unsalted butter
