For the banana cake:
1/2 cup unsalted butter - softened to room temperature
1/2 cup granulated sugar
1/2 cup brown sugar
2 large eggs
2 teaspoons vanilla
3-4 whole over-ripe bananas - mashed
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon apple pie spice
2 1/4 cups all-purpose flour
For the apple pie filling:
3 medium granny smith apples - peeled and diced
2 Tablespoons unsalted butter
1 Tablespoon water
1/4 cup brown sugar
1 teaspoon vanilla
1 teaspoon apple pie spice
1 teaspoon cinnamon
For the icing:
1 Tablespoon unsalted butter - melted
1 1/2 Tablespoon heavy cream
2 teaspoons vanilla
1 teaspoon apple pie spice
1 1/2 cups powdered sugar - more or less, depending on consistency

Peel and dice the apples. Place in medium stock pan and combine apples and the remaining filling ingredients. Cook on medium heat until apples are soft, about 15 - 20 minutes....
