This jam is so refreshing, healthy and very easy to make! It\\\'s not loaded with sugar and still tastes great!

2 cups fresh sliced apricots
2 Tbsp honey
1/2 tsp fresh squeezed lemon
1 tsp vanilla
*optional- chia seeds or flaxseeds for texture
