After falling in love with the Asian Chicken Salad at McDonalds I had to find a more frugal option. We love this homemade one as a healthy side with dinner or added chicken for lunch.

1 bag baby spinach
small can of mandarin oranges, drained
1 bag of dried cranberries
1/4 cup slivered almonds
Dressing (see below)
1/4 cup canola oil
2 tablespoons red wine vinegar
1/2 teaspoon salt
dash pepper
1 teaspoon dry parsley
2 tablespoons sugar
dash of Tabasco
small can of mandarin oranges, drained
1 bag of dried cranberries
1/4 cup slivered almonds
Dressing (see below)
1/4 cup canola oil
2 tablespoons red wine vinegar
1/2 teaspoon salt
dash pepper
1 teaspoon dry parsley
2 tablespoons sugar
dash of Tabasco
Wash baby spinach. Add all salad ingredients together. Make dressing by mixing together oil, red wine vinegar, pepper, parsley, sugar, and tabasco.
