Asparagus Risotto

This is one of my very favorite side dishes! The flavor is amazing!

1 tsp. salt
1 – 1 1/2 lb. aspara­gus, trimmed and cut into bite-sized pieces
4 tablespoons butter
3 –4 shal­lots, minced
1 cup uncooked Arbo­rio rice
1 tablespoon fresh lemon juice
1 tablespoon gar­lic, minced
4 ½ — 5 cups chicken broth
1/3 cup grated fresh parme­san cheese
1 teaspoon bal­samic vinegar
1/2 tsp. Mon­treal steak seasoning
2 tablespoons olive oil
1 onion, diced
8 oz. mush­rooms chopped
1 tsp. sugar
Pre­pare aspara­gus by allow­ing it to break at it’s nat­ural point at the end; dis­pose of the bot­tom por­tion which will be tough and fibrous. Cut or break into bite-sized pieces.
