Avocado Kumquat Ice Cream

The creamy texture of avocado is perfect for raw vegan ice cream!

12 kumquat
1 teaspoon maple syrup
1 avocado
Cut kumquat into quarters, remove seeds. Peel avocado and remove the core. Cut the flesh into chunks. Put kumquat and syrup into a food processor and blend until mixed. Add avocado and blend again until smooth. Put into a freeze-proof container and freeze for 1 to 2 hours. Smash with a spoon, or blend in a blender.
