The best vegan/paleo/GF/sugar free "pudding" you will ever eat! Packed with vitamins and so good for you! And ridiculously easy. :)

1 avocado
6 medjool dates, pitted
flesh of 2 lemons, no peel or seeds
1 TBSP lemon juice
In a food processor, blend all ingredients together until smooth. May need to add a little water. Refrigerate and enjoy! VARIATIONS: Add 1 tsp chia seeds for a thicker consistency. Add stevia to your taste to sweeten more. Add your choice of fruit (kiwi, strawberries are personal favorites). Add coconut flakes. The possiblilities are endless!
