Awesome Lasagna Soup

Classic lasagna flavors transformed into soup form, with melty cheese in the middle. Easier, cheaper, and tastier than lasagna if you ask me!

½ lb Italian sausage
1 large onion, chopped
2-3 cloves garlic, minced
1 heaping teaspoon dried oregano
1 Tablespoon dried basil
¼ teaspoon red pepper flakes, optional
1 (8 oz) can tomato sauce
1 (14.5 oz) can diced tomatoes
4 cups (or 2 cans) chicken broth
1 cup water
1 bay leaf
1 cup small, uncooked whole grain pasta
2 cups roughly chopped spinach leaves, loosely packed
8 oz. ricotta cheese
1/3 cup freshly grated Parmesan cheese
Salt and pepper to taste.
Optional: shredded mozzarella for garnish
