Bacon Fried Rice...what's not to love!?

1 1/2 C long grain white rice
3/4 C low-sodium soy sauce
2 tbsp. light brown sugar
1 tbsp. rice vinegar
1 tbsp. fresh ginger, grated
1 tbsp. canola oil
10 baby carrots (approx.) OR 2 carrots (cut into matchstick sized strips)
1 C peas
1/2 C water chestnuts, chopped roughly
4 large eggs, beaten
6 slices of bacon, thick cut
extra eggs for a fried egg on top -- optional
**I made a couple changes, and omitted several ingredients that your family may like but mine doesn't. To see the other ingredients go here.
