Baked Chicken and Rice
273
This is THE BEST chicken and rice, and oh so easy! This one of my husbands favorite meals. The rice has so much flavor to it. You can put it together in about 5 minutes and then put it in the oven to cook while you get the rest of your meal cooked. All you need with it is a good salad, or a vegetable and some cornbread (if desired) tops off this meal.
4
8 pieces of chicken
1 1/2 cups of rice (i use white rice, but you could use any kind)
1 can of cream of chicken soup (10 3/4 oz) (or you can use any kind of cream soup you like)
3 cups of chicken broth
Natures Seasoning (or whatever seasoning you prefer to season the chicken
13 x 9 glass dish

Spray dish with cooking spray
Pour rice in bottom of dish
Mix soup and broth together in bowl and put in microwave for about 2 minutes. Take out of microwave (be careful, bowl will probably be hot) Mix liquid again, then pour over rice.
Don't worry, it will seem like a lot of liquid but it will cook out!
Wash chicken, season and place on top (of rice and broth)
Cover dish and cook on 350 for 45 minutes, Uncover and cook for an additional 30 minutes
Take out of oven, let rest for about 10 minutes and ENJOY!
