Baked Chimichanga

Recipe for a crisp and delicious baked chimichanga. All the crispness of a fried chimichanga without the additional fat.

3 tablespoons vegetable oil
1 onion, chopped fine
1 can black beans, drained and rinsed
1 10 oz package of ready brown rice (I get mine at Trader Joe's)
3 cups of cooked chicken, cut into bite sized pieces (make it quick and start with a rotisserie chicken)
1 teaspoon chipotle chiles in adobo sauce, minced
1 cup shredded Mexican cheese blend
salt and pepper to taste
8 flour tortillas
