A delicious vegetable side dish!

2-3 Sweet potatoes, peeled and cut into bite size cubes
2 tsp olive oil
1 tbsp butter
1/4 cup brown sugar (the original recipe suggests 1 tbsp, but that was definitely not enough for us!)
1 tsp of ground cinnamon
1/4 tsp of ground nutmeg
Salt to taste
