Baked Sweet Potatoes with a Five Star Feta Salad. Crispy sweet potatoes mingle with a tangy feta salad in this deceptively simple but tasty dish.

2 mid sized sweet potatoes (300-400gr each)
100 gr. feta or similar cheese
1 handful olives
1 small red onion/ 3 spring onions
10-12 cherry tomatoes
1 clove of garlic (peeled and diced)
Handful fresh (chopped) or 1 tbsp dried basil
½ tsp cumin
½ tsp cayenne pepper
¼ tsp fresh ground pepper
2 tbsp olive oil
juice of ½ lemon
Optional:
Creme fraiche/Greek yoghurt
? cucumber for extra crunch
100 gr. feta or similar cheese
1 handful olives
1 small red onion/ 3 spring onions
10-12 cherry tomatoes

Handful fresh (chopped) or 1 tbsp dried basil
½ tsp cumin
½ tsp cayenne pepper
¼ tsp fresh ground pepper
2 tbsp olive oil
juice of ½ lemon
Optional:
Creme fraiche/Greek yoghurt
? cucumber for extra crunch
Wash the potatoes and rub a coat of olive oil and salt on the skin.
Next, put them on a baking tray and layer of foil. Off they go in the oven. Depending on the size of the potato they’ll be ready somewhere...
