A soft, moist cookie that is delicious ! With a few substitutes, these cookies are healthy enough to eat for breakfast!

1 cup ripe banana, smashed
3/4 cup white sugar {or use 1/2 cup honey instead}
1/2 cup vegetable oil {or use 1/2 cup applesauce instead}
1 egg
2 cups all-purpose flour {can replace with whole wheat}
2 teaspoons baking powder
3/4 teaspoon salt
1 teaspoon baking soda
1 tsp vanilla extract
3/4 cups semisweet chocolate chips
1/4 cup chopped walnuts (optional)

Mix all ingredients until well blended. If you opt to use raw honey, you can microwave it for about 30 seconds to make it easier to mix in. It's not necessary but does make it easier.
