Banana muffins with a bit of "crunch!"

-2 cups flour
-1 1/2 teaspoons baking powder
-1/2 teaspoon baking soda
-1/4 teaspoon salt
-1 Tablespoon cinnamon
-1 teaspoon nutmeg
-1/2 teaspoon ginger
-1/2 teaspoon cardamon
-2 eggs
-1 1/2 cups mashed banana (about 5)
-1 cup sugar
-1/2 cup vegetable oil
-1 teaspoon almond extract
-1 teaspoon vanilla extract
Crunch topping:
-6 Tablespoons butter (melted)
-1/4 cup flour
-1/4 cup old fashioned oats
-1/2 teaspoon cinnamon
-1 1/2 teaspoons baking powder
-1/2 teaspoon baking soda
-1/4 teaspoon salt
-1 Tablespoon cinnamon
-1 teaspoon nutmeg
-1/2 teaspoon ginger
-1/2 teaspoon cardamon

Crunch topping:
-6 Tablespoons butter (melted)
-1/4 cup flour
-1/4 cup old fashioned oats
-1/2 teaspoon cinnamon
1. Preheat the oven to 350 degrees Fahrenheit and place muffin liners in a muffin tin
2. Mix the first 8 ingredients (flour through cardamon) in a bowl. Set aside.
3. Using a hand mixer, mix the banana, oil, eggs, sugar, and extracts.
4. Fold the dry ingredients into wet ingredients until just combined.
5. Spoon the mixture into the muffin tins, just over halfway full.
6. Mix together the crunch topping ingredients with a fork.
7. Spoon about a tablespoon of the topping into the center of each muffin, pressing down gently.
8. Bake your muffins 10-12 minutes or until a toothpick comes out clean.
9. Allow to cool 5 minutes before removing from the pan.
10. Enjoy! This recipe can also be baked in a loaf pan as a more traditional banana bread.
