3
Moist muffins that are full of banana flavor! A healthy breakfast or snack, and delicious at any time of the day!
12
1 1/2 cups flour
1 cup rolled oats
1/2 cup white sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 egg
3/4 cup milk
1/3 cup vegetable oil
1/2 teaspoon vanilla extract
1 cup mashed bananas
1 cup sliced almonds
1 cup rolled oats
1/2 cup white sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 egg
3/4 cup milk
1/3 cup vegetable oil
1/2 teaspoon vanilla extract
1 cup mashed bananas
1 cup sliced almonds
Preheat oven to 400 degrees.
In a large bowl, whisk the egg. Stir in the milk, oil, and vanilla. Add the banana and mix thoroughly. Stir in flour, oats, sugar, baking powder, baking soda, and salt until combined. Crunch up your desired amount of the sliced almonds in a small, plastic sandwich bag, or just in your hand before adding them to the mix. You don't have to use the whole cup, or any at all! You can even add in other ingredients such as other nuts or chocolate chips.
Bake the muffins at 400 degrees F for 17 to 20 minutes.
