Banana Sausage and Bean Burgers
29
Oil-free, salt-free vegetarian sausage and burger.
1
1 banana
2 strawberries
1 tablespoon orange juice
½ cup broccoli florets, cooked.
1 stick celery, chopped.
1 tablespoon chopped tomato
1 tablespoon chopped beetroot
1 tablespoon chopped onion
7 ounce pinto beans or garbanzo
3 tablespoon cooked white rice
2 strawberries
1 tablespoon orange juice
½ cup broccoli florets, cooked.
1 stick celery, chopped.
1 tablespoon chopped tomato
1 tablespoon chopped beetroot
1 tablespoon chopped onion
7 ounce pinto beans or garbanzo
3 tablespoon cooked white rice
To make banana sausage:
Prepare a serving plate that is big enough to accommodate one whole banana and two burgers about 2-inch in diameter.
(Optional) Trim off the tip of the strawberries and set aside. Make few vertical cuts to get 3 to 4 strawberry slices.
Cut remaining strawberries into small pieces, put into a blender with orange juice and blend into sauce.
Peel the banana and place on a serving plate. Put the strawberry slices on top of the banana, then pour strawberry sauce over them.
Put the broccoli next to the banana.
To make Bean Burgers:
Preheat oven to 350 degrees Fahrenheit.
Mix beans and rice in a food processor or mash with a spoon. Add celery, tomato, beetroot and onion. (Add more rice to make it more solid.)
Shape the bean mixture into two patties, and place them on a slightly oiled baking dish.
Bake for 10 minutes.
Remove bean burgers from the oven, and place next to the broccoli.
(Optional) Garnish with strawberry tips and (optional) parsley or cilantro.
