Banananza Bread!

This recipe uses more bananas than the typical banana bread recipe, and is well worth it!

2 1/2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 Tablespoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground cloves
1/2 teaspoon ground ginger
2 eggs, beaten
8 ripe bananas, mashed
3/4 cup sugar
1/3 cup cooking oil
1 teaspoon vanilla extract
1 teaspoon almond extract

Streusel Topping:
1/3 cup packed brown sugar
3 tablespoons all-purpose flour
3 tablespoons oats
1 teaspoon cinnamon
3 tablespoons butter
1/2 cup chopped walnuts
1. Preheat oven to 350 degrees Farenheight. 2. Grease two loaf pans; set aside. 3. In a bowl combine flour, baking powder, baking soda, salt, and spices. Set aside. 4. In a bowl combine eggs, banana, sugar, extracts, and oil. Mix well. 5. Add egg mixture to flour mixture. Mix until smooth. 6. Spoon batter into prepared pans and spread streusel on top. 7. Bake for 1 hour, or until a knife comes out clean. If the top starts browning too much, cover in tin foil. 8. Cool for 15 minutes in pan. Remove from pan and cool completely before storing. Streusel Topping: 1. Combine all ingredients. 2. Stir together with a fork.
