4 tbsp mayonnaise
1/2 cup cilantro (coriander) sprigs only #
2 onions, green (spring) green part only, cut into 2 inch (5cm) lengths #

For Garnish
tamari (soy) sauce #
1/2 red chilies, long Asian style sliced thinly #

For Pickled Carrot
3 fl ozs white vinegar
1/3 cup raw sugar
1 carrot coursely shredded
1 tsp salt, ground sea

For Lemongrass Pork
5 ozs pork, ground (minced)
2 tsp palm sugar grated # *
2 tsp fish sauce #
1 tsp tamari (soy) sauce #
1/2 lemongrass white part finely chopped, green party reserved #
1/4 tsp garlic finely chopped #
