BBQ Meatloaf

this recipe is from my sister molly she gave me this best barbecued meatloaf recipe and I made it for my dad and it turned out excellent so I hope you enjoy

1lb ground beef
1/2 red bell pepper, diced and seeded
1/2 onion, diced
1 egg
1 jalapeno seeded and diced
2 slices of sourdough or white bread
1/3 cup of your favorite bbq sauce (sweet baby ray's root beer or weber's molasses is best)
splash of milk (to soak bread in)
1 tsp grill seasoning
1 tsp jarred pickled relish
salt and pepper

saute onion, bell pepper and jalapeno until soft and let cool a bit before adding to meat mixture.
in a bowl break an egg and splash of milk and add the bread slices to the milk and egg mixture and let it sit while you mix the meatloaf
in a large bowl combine ground beef, grill seasoing, bbq sauce. relish and the milk egg mixture and sauteed veggies and season with salt and pepper and mix very well with your hands until mixed well. do not over mix line roasting pan with foil then add the meat mixture and form into a loaf and brush with more bbq sauce on top and bake at 350 for 1 hour let sit then carve and enjoy
