A delicious and soul warming chicken pot pie, made with leftover roasted chicken and store bought pie crust.

3 T butter
1 small onion (or 1/2 a large), diced
3 medium carrots, diced
2 celery stalks, diced
2-3 C leftover chicken, diced
1/4 C flour, all purpose
3 C chicken broth
1 tsp coriander
1 tsp salt
1/4 tsp black pepper, freshly cracked
1/4 C milk (not skim)
2 pie crusts
1 egg
2 T water
2 premade pie crusts, defrosted
