Black Bean & Rice Soup

You always hear about beans and rice being a super cheap meal, right? Here’s a delicious update on the frugal combo that even my bean-hating husband approved of AND has requested I make again! We do Meatless Mondays every week, and this is a staple in my vegetarian meal rotation.

2 cans of drained black beans
1 1/2 cups chicken broth
1 1/2 cups water
2 Tbsp vegetable or olive oil
1 cup chopped onion
1/2 cup chopped carrot
2 tbsp minced garlic
2 tsp chili powder
1/4 tsp cumin
2 cups cooked rice (I used brown but white would be good, too)
