Blueberry Breakfast Cake

This is the perfect cake for breakfast and brunches and really any time of the day. The fresh blueberries mixed with the lemon zest is amazing! There's just something about warm cooked blueberries. I could seriously eat the whole pan in one sitting. And it isn't too sweet...which is why you can eat so much. This beats cereal in my book any day of the week. :-)

½ cup butter
zest from 1 large lemon
1 cup sugar
1 egg
1 tsp vanilla
2 cups flour (set aside 1/4 cup of this to toss with the blueberries)
2 tsp baking powder
1 tsp salt
2 cups fresh blueberries
½ cup buttermilk (or 1 TBSP lemon juice in 1 cup milk)
