3 T. granulated sugar

1 tsp. baking soda

1/2 tsp. salt

1 1/2 cups buttermilk

2 large eggs, separated

2 T. grated lemon peel

2 T. lemon juice

1/3 cup part-skim ricotta cheese

1 1/2 cups blueberries (fresh is best)
