Boiled Mixed Mushrooms with Hangzhou Chili Pepper

Mushroom is a natural flavor enhancer. With concentrated tastes from four types of oriental mushrooms, this dish needs only simple low-fat flavorings to become most appealing. The Hangzhou chili pepper further enriches the tastes and exotic feeling of this dish. This pepper looks like large Thai chilies, but is smaller, and not too spicy. It may be replaced by large green Thai chilies.

8 oz. golden needle mushroom
8 oz. shiitake mushroom, fresh or 3/4 oz. dried and soaked in cool water for 1 hour
8 oz. king trumpet mushroom
8 oz. shimeji mushroom
8 oz. Hangzhou chili peppers
2 red chili peppers
2 cloves garlic
1/8 oz. ginger
3/4 T. vegetable oil
3/4 T. sesame oil
1 tsp. light soy sauce
1/2 tsp. salt
1 tsp. sugar
