1/4 c. olive oil
2 Tbsp. butter
2 medium onions ( finely chopped )
4 ribs celery ( finely chopped )
2 carrots ( finely chopped )
5 cloves garlic ( sliced )
4 oz. mushrooms
1 lb. ground pork
1 lb. ground veal
4 oz. ground bacon
6 oz. tomato paste
1 c. milk ( or 1/2 c. chicken stock )
1/2 c. dry white wine
parsley
1/2 tsp. oregano
1/2 tsp. basil
2 bay leaves
1 1/2 tsp. salt
1/2 tsp. pepper
1 tsp. thyme
28 oz. chopped tomatoes
