1 bunch fresh coriander leaves, chopped
1 bunch spinach, blanched in boiling water for 3 minutes
boiled adzuki beans and shredded daikon in a rice vinegar-salt-Stevia mix
1 tbsp. juice of ginger
2 tsp. Stevia syrup
2 tsp. light soy sauce
1½ tbsp. rice vinegar
½ tsp. coriander, ground

2 tbsp. avocado oil

In a bowl, combine the orange juice with the ginger juice, Stevia syrup, soy sauce, rice vinegar and ground coriander. In a skillet over high heat, fry the tempeh patties with avocado oil for 5 minutes on each side. Add the orange-ginger mix, cover, and cook over medium heat for about 10 minutes, until a thick glaze consistency is attained. Turn the patties to coat evenly. Transfer to a serving platter; sprinkle some lime juice, garnish with chopped coriander.
