Bread Hand Roll

The western reincarnation of a sushi hand roll.

1 slice toast bread
1 tablespoon peanut butter
1/2 tablespoon chopped tomato
1/2 tablespoon chopped cucumber
1/2 tablespoon chopped blueberries
½ tablespoon chopped green onions
1 round slice of apple, about ¼-inch thick
Trim off the edges of the toast bread, if they are too hard. (This makes the rolling easier.) Spread the peanut butter on the bread. Mix tomato, cucumber, blueberries and scallions – this is the filling. Use two cookie cutters (one big, one small) to cut the apple slice into a ring. The hole has to be big enough to hold the bread roll (preferably more than 1-inch in diameter). Roll up the bread into a cone, peanut butter inside. Put the filling in from the opening, fill as much as you can. Tuck one end of the roll into the apple ring so the roll stays locked.
