I have tried a couple breakfast casseroles, but every time the potatoes come out the texture of mashed potatoes... I don't know about you, but I like my potatoes to be crispy or at least firm, unless I am specifically going for mashed potatoes. Needless to say, those casseroles didn't make the cut. So finally, I decided to make my own version! This is the result. It is the simple version, but would be great with spicy sausage and red bell pepper added to the mix!

4 potatoes (baked or microwaved until soft)
8 eggs
1/3 cup cream
1/2 TBS garlic powder
2 cups nacho cheese
Salt and pepper to taste
