Egg Taco is a wonderful breakfast to serve to family and friends that takes just a few minutes and is very filling.

6 eggs
1 medium red bell pepper, chopped
2 tomatoes, chopped
3/4 cup onion, chopped
3/4 cup bacon bits
1 cup shredded yellow cheddar cheese
Salt to tase

1. Combine chopped onion and bell pepper and saute.
2. Add tomatoes and simmer for 5 minutes on low/medium heat.
3. Add salt to taste. Set aside.
4, Bring 6 eggs into a bowl and mix until egg white and egg yolk are combined. Season with salt and pepper.
5. Heat a medium skillet with cooking spray. Add 1/3 cup of egg mix and spread evenly so it can cover the bottom of the skillet. It should be a thin layer. Cook 60 seconds on each side. Repeat until all egg mixture is used.
6. To make the taco: place the egg taco on platter. Add 2 tbsp of sauteed vegetables onto one side of the egg, and garnish with cheese and bacon.
7. Egg taco is ready!
