Broccoli, Potato, Pear, Avocado, Silky Soup Chopped

When I decided to try my hand at Broccoli Soup I couldn't decide if it should be for St. Patty’s Day or for Easter. It goes either way and to tell the truth, it’s so yummy I’ll be chopping this one all year long. The Hubby is loving the leftovers as a “Sauce” for Chopped Chicken.

Soup Pot Ingredients:
2 Tablespoons unflavored Coconut Oil or Olive Oil
1 Brown Onion, Chopped. Use a brown or white onion to keep the soup a pretty green.
2 Cloves Garlic, Chopped
6 cups of a combo of Broccoli Florets and Stems. Peel the stems.
1 Pear, Peeled and Chopped
3 cups Red Potatoes, peeled and Chopped
1 teaspoon Kosher or Sea Salt
1/2 teaspoon dried Oregano
1 teaspoon dried Sage

Now Add:
4 cups Chicken or Vegetable Broth

Now Add:
1/2 Avocado, Chopped.

Zing Factor:
1 Tablespoon Coconut Vinegar or Apple Cider Vinegar
2 Tablespoon Greek Yogurt for topping
