This is an original "copycat" recipe of the Caprese Pizza made and served at the Pizzeria Limone in Salt Lake City, Utah. It is a delicious gourmet made with common kitchen ingredients.

2-3 tablespoons olive oil, divided
1 tablespoon garlic, minced
3 thin slices of a red onion
1-2 tablespoons balsamic vinegar
4 small tomatoes, thinly sliced
Fresh basil, either small whole leaves or sliced larger leaves
3 tablespoons Balsamic Glaze
1 cup cubed mozzarella cheese
Up to 1/2 cup of shredded or grated parmigiano reggiano, parmesan, or asiago cheese {or a combination of these}
