Carrot Oatmeal Raisin Cookies

These delicious little cookies are a great way to sneak some good stuff into toddlers. And they are delicious for Moms and Dads too!

½ C butter
1 C sugar
1 egg
1 C cooked and mashed carrot , or grated raw carrot
1/3 C milk
1 tsp vanilla
1 C white flour
1 C whole wheat flour
2 tsp baking powder
1 tsp cinnamon
¼ tsp salt
2 C rolled oats
1 C raisins
1 C sugar

Beat the butter, sugar, and eggs. Combine the carrot, milk and vanilla and add to butter mixture. Combine the dry ingredients and add to the wet. Spoon onto a cookie sheet and bake at 375’ for 12-15 minutes.
