Carrot Rosemary Soup

A simple, healthy and delicious soup. Serve with a green salad and good bread for a complete meal.

1 tsp. olive oil
1 small onion, sliced
1 clove garlic, thinly sliced
2 lb carrots, peeled and cut into 1-inch pieces
4 cups low-sodium chicken broth
1 tsp chopped fresh rosemary or 1/2 tsp dried
1/2 cup nonfat Greek yogurt
salt and pepper, to taste
