Celeriac Soup

Celeriac when cooked has the texture of potato. It makes a perfect hearty soup.

1 tablespoon olive oil
1 celeriac, peel and cut into cubes.
½ cup chopped onion
3 chopped garlic cloves
2 cups vegetable broth or water
Salt to taste
Ground black pepper to taste

Heat the oil in a large pot over a medium heat and add the celeriac, onion and garlic.
Sauté for a few minutes.
Add vegetable broth or water to pot and bring to boil then reduce the heat and simmer for 15-20 minutes or until celeriac is tender.
Remove from the heat and let cool a little.
Transfer the soup to a food processor or blender and blend until smooth.
Pour the soup back into the pot to reheat and season with salt and freshly ground pepper.
(Optional) Top with chopped sausage, vegetarian sausage, chopped green onions or other veggies.
