Cheese Corn Casserole

A cornbread based side dish with gooey layers of sauteed oinions, sour cream and cheese on top. It is both a little sweet and savory at the same time. Very easy dish that is a must have for Thanksgiving at our house.

3 T. butter
1 c. sliced onions
1/2 c. milk
a dash of hot sauce such as Tabasco
1 c. creamed corn
1 c. sour cream
1 1/2 c. corn muffin mix (one Jiffy Mix works great)
1 c. grated sharp cheddar cheese

Preheat oven to 350 degrees.
Prepare an 11x7" baking dish by spraying with non-stick cooking spray.
Saute' the onions in the butter until they are starting to look transparent and set aside.
Mix corn muffin mix, milk, corn and hot sauce in a medium bowl. Pour mixture into the prepared baking dish.
Layer the sauted onions on top of the corn mufffin mixture. Next layer on the sour cream and then the cheese.
Bake for 35-40 minutes , covering with foil the last half of the cooking time. It should be set in the middle when done.
