1 can fire roasted diced tomatoes in garlic
1 can organic refried black beans
1 medium red bell pepper, diced
1 medium green bell pepper, diced
1 medium shallot, minced
2 tbsp olive oil
1 bag frozen sweet corn (I used Alexia Italian Herb Corn w/ Sun dried Tomatoes)
2 tbsp chili powder
2 tsp paprika
1 tsp cumin
8 large whole wheat tortillas (I used La Tortilla Factory low carb, high fiber whole wheat tortillas)
1 lb extra lean ground chicken breast
3 cups shredded low fat colby jack cheese
1 can organic refried black beans

1. in a large cast iron pan on medium-high heat, add 1 tbsp of olive oil, onion, and shallot to pan and cook until translucent
