Cheez-It Meatloaf

A twist on a classic meat loaf. My hubby loves cheez-it's, so we switched out traditional bread crumbs and replace them with crushed cheez-it's of any flavor.

1 lb. ground beef
1/2 c. crushed cheez-it's
8 oz. diced roma tomato
1/2 c. chopped green onion
1 large egg
1 1/4 tsp. salt
1/4 tsp. pepper

1/3 c. ketchup
2 tbsp. brown sugar
1 tbsp. yellow mustard
Preheat oven to 375 In a large bowl, mix together: ground beef, lightly beaten egg, salt, pepper, green onions, tomatoes, and cheez-it's. Place mixture in a 8x4 in. loaf pan and shape into a loaf. Mix ingredients for the topping: ketchup, brown sugar, and yellow mustard. Spread over the top of loaf. Bake for 1 hour. This dish goes well with a side of baked potatoes and green beans.
