Cherry S'mores Brownies

A graham cracker cookie base, layered with marshmallows, chocolate chips and Lucky Leaf cherry pie filling, and topped with a rich and fudgy chocolate brownie.

For the cookie:
1/2 cup butter
1/2 cup white sugar
1/4 cup brown sugar
1 egg
1 tsp vanilla
1 cup flour
1 cup graham cracker crumbs
1/2 tsp salt
1/2 tsp baking soda
2 cups mini marshmallows (enough to cover the entire pan)
1 can Lucky Leaf cherry pie filling (lite or regular)
Your favorite brownie recipe, homemade or boxed
(For this recipe I used Betty Crocker Triple Chunk brownie mix)
1/2 cup butter

1 egg
1 tsp vanilla
1 cup flour
1 cup graham cracker crumbs
1/2 tsp salt
1/2 tsp baking soda
2 cups mini marshmallows (enough to cover the entire pan)

Your favorite brownie recipe, homemade or boxed

Preheat the oven to 350 degrees
Line a 9x13'' baking sheet with foil and coat with non-stick cooking spray
Start with the cookie dough:
Cream butter and both sugars on medium for about 1 min
Add the egg and vanilla and mix thoroughly
Add the flour, graham crackers, salt and baking soda and mix until fully incorporated
Spread the dough in the baking pan, laying the marshmallows, chocolate chips and cherry pie filling on top
Make your brownie batter and pour evenly into the baking pan
Cover with foil and bake 30 min; uncover and bake an additional 10-15 min
Allow to cool at least 30 minutes or chill in refrigerator for easy cutting
