Cherry Vanilla Nut Skillet Granola

No need for an oven to enjoy fresh, homemade granola!

1/2 C almonds, chopped
1/2 C pecans, chopped
2 C oats
1/2 C oat or wheat bran
1/3 C ground flaxseed
1/2 tsp salt
1/2 C honey
1/4 C water
3 tbsp coconut oil, I measured it solid and then melted it before whisking into the other ingredients
1 1/2 tbsp vanilla extract
1 C dried tart cherries
1/2 C pecans, chopped

Place nuts in a large skillet. A skillet with high sides works best. Toast nuts over medium heat for 7-10 minutes or until nuts just start to turn light golden brown, they will toast more as granola...
