This Chicken Avocado Corn Salad is creamy, tasty and delicious. It can be ready in just 30 minutes. Healthy ingredients from veggies, fruits, herbs that makes it mouth watering. Once you tasted it, you would love it and becomes part of your family favorite dish.

4-6 servings
Salad:
3 cups Romaine Lettuce ( chopped )
3 cups spring greens ( mixed )
1 1/2 pound chicken breast ( chopped and shredded or store bought rotisserie chicken is fine )
1 avocado ( chopped )
1/4 cup goat cheese ( crumbled )
2 pieces Roma tomatoes ( coarsely chopped )
1 cup cooked corn ( either cut from the cob or frozen )
1 cup dates ( about 12-14 whole dates, sliced )
1 cup cornbread croutons
1/2 cup toasted almonds ( coarsely chopped )
FOR THE VINAIGRETTE:
1 1/2 tablespoon Dijon mustard
1/4 cup squeezed lemon juice
1 teaspoon apple cider vinegar
2 teaspoons honey or pure maple syrup
2 cloves garlic ( small and finely minced )
1/2 teaspoon dried oregano
1/4 teaspoon dried basil
3/4 cup extra virgin olive oil
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
  1. Add all of the salad ingredients in a large mixing bowl.
  2. Lightly toss with just enough vinaigrette to coat.
